Mafia 3 could look like RDR2 or Mafia DE and it’s still a really underwhelming game. Mafia 1 DE is great because of the quality of game it was built on and because it’s a remake of a beloved game for it’s time. If Mafia DE was release as a brand new IP for £70/$70 in 2021 it wouldn’t stand out in my opinion.

Mafia 2 DE is a remaster of Mafia 2 which was a worse game than 1 and isn't updated to the same level as 1DE. Both are good games but 1DE is in a different league.

All known characters from the original appear in Mafia Definitive Edition.
